When cooking the food, the kitchen staff takes particular note of ecological and social responsibilities, with no duck or goose foie gras or any protected species used in the cuisine. The focus is placed on organic and free range regional products. Even the wines come from organic and dynamic vineyards. This emphasis carries over into the flavour, which guests can also experience in the lunchtime specials.
