| Austrian Restaurant  The Hotel Blaue Gans, situated right in the centre of Salzburg’s old town, welcomes its restaurant guests with its own interpretation of both traditional and contemporary culinary options. Within the comfortable confines of 660 year old walls with wood paneling and murals, Heidi Neuländtner prepares “a simple new style of food” in her kitchen. This encompasses not only her own in-house specialities, but also some of the most popular traditional Austrian desserts, including pancakes, dumplings filled with plum jam, and curd dumplings. The menu mirrors the diversity of Austrian cuisine. For example, on the menu, you will find prime boiled beef “classic” with mashed potatoes and creamed spinach in a chive sauce, roasted char fillet with baby carrots, and sorrel with potato pancakes, or homemade yoghurt ice cream made from sheep’s milk with a strawberry and rhubarb ragout. In addition, there is a well established daily changing lunchtime menu in the Blaue Gans - high quality, and aimed at businessmen, as it is possible to take advantage of the free W-LAN on offer. For those who like to eat out under the blue sky in good weather in order to relax and enjoy the experience to the full, the Salzburg cuisine is served in the Mediterranean urban pub garden in Herbert von Karajan Platz, where, whilst you are eating, you are able to enjoy the spectacular view over the Mönckeberg walls.
